Orange Vanilla Chia Pudding
This recipe is a great way of changing up normal chia pudding! Orange and vanilla flavours combine to create a yummy treat that is great for brekky, snacktime, or even as a healthy vegan dessert!
Soaking chia seeds activates their natural vitamin C, and adding a little bit of orange gives this recipe a full on vitamin boost!
What you'll need:
- 1/4 cup Connect Foods chia seeds
- 1 cup almond or coconut milk
- 1 Tbsp maple syrup
- 1 tsp vanilla bean powder
- 1 whole orange
Take the orange and zest the rind, until you have about two tablespoon's worth. Slice the orange in half, and set one half aside.
In a bowl, squeeze the juice of half of the orange. Then add chia seeds, your non-dairy milk of choice, maple syrup, vanilla bean powder, and half of your orange rind zest. Whisk together for about 30 seconds. Allow to sit for about a minute and whisk again. This helps prevent the seeds from clumping during their process of expanding.
Allow to set in the fridge for at least an hour (or longer) Setting it overnight will allow the flavours to marinate together nicely!
Divide into serving bowls, and top with remainder of orange zest for garnish and extra flavour. Serve with orange slices on the side of the cup or glass.
