Probiotic Chia Coconut Yoghurt (Great for Gut-Health!)

Did you know you can make your own yummy probiotics at home? This is a fantastic way of replacing your morning yoghurt. High in good fats and omegas, this super sustainable source of energy will leave you feeling clean and energised.

Coconut milk kefir is a great way to get your pro-biotics in, with massively less dairy. You can make this recipe completely dairy-free by using a vegan probiotic packet instead of the kefir (this brand has whey powder). You can easily order them online if you can't find them at your local health food store.

What you'll need:

  • 1/2 cup Connect Foods Chia Seeds
  • 1 can coconut cream
  • 1 probiotic packet

Shake up the can of coconut milk very well. Open, and pour into a container that comes with a lid. Fill the can with equal parts water and add that in as well.

Stir in probiotic packet. You can also use a blender to smooth out any chunks of coconut fats/oil. Cover the container with a kitchen towel, and allow to sit for 24 hours to cultivate.

Stir in chia seeds, cover, and place in the refrigerator for another 12 hours. Remove from the refrigerator. Place in a blender and blend until creamy and smooth, and all of the chia seeds have been ground into the yoghurt.

Soaking the chia seeds before blending activates their naturally occurring vitamin C!

Serve with topping of your choice. Here I used some fresh mulberries and strawberries, with a drizzle of maple syrup for some added sweetness.

Makes about 4-6 servings

Enjoy!
