Dark Chocolate Peanut Butter Cups
These peanut butter cups are sure to bring joy to your friends and family! They're a super healthy take on classic peanut butter cups you can buy in the store, but without the processed sugar, preservatives and other nasties. Only the good delicious nut protein and chocolate nutrients!
What you'll need:
- 250g cacao butter
- 1 cup Connect Foods Cacao Powder
- 1/4 cup maple syrup (or organic palm syrup)
- About 1/2 cup peanut butter (can also be substituted for almond butter)
- Small paper cups for moulds
Using a double boiler, gently melt the cacao butter until it is liquid. Whisk in the sweetener of your choice, until it is completely mixed. Use a baking sifter to sift in cacao powder, so as to remove any clumps. Whisk again to blend completely.
Separate paper cups and arrange on a large baking tray. If they are very thin, use two or three cups stuck together to help them keep their form.
Use a creamer pourer to carefully add a small amount of the melted chocolate to the bottom of each cup, just enough to coat the bottom. Place tray in the freezer and allow the chocolate to set fully. Remove from freezer.
Using a small spoon and spatula (or your fingers!) carefully dollop a small amount of nut butter in the centre of the cup, leaving room on the sides for chocolate. Once the nut butter is in all the cups, use the remaining chocolate and pour over nut butter, covering completely.
Place the tray back in freezer and allow to set for about 20-30 minutes before serving. Makes about 36-48 cups, depending on size.
Keep stored in fridge or freezer.
