Gluten-free Sweet Potato and Avocado Brownies
These gluten-free Sweet Potato and Avocado Brownies are packed with nutrients. Including vitamins A and C, folate, calcium, potassium, fibre and loads of antioxidants and magnesium from the raw cacao. Plus, the added avocado provides plenty of good fats to keep your heart healthy. These super healthy brownies are also dairy, grain and refined-sugar free. They taste so good, you'll feel completely guilt-free enjoying more than just one.
What You'll Need:
- 1 large sweet potato (to make roughly 2½ cups)
- 2 Tbsp avocado
- 1 cup Medjool dates
- ½ cup almond meal
- 2 tbsps Connect Foods Organic Raw Cacao powder
- ½ cup Organic Buckwheat Flour (you can also use Coconut Flour)
- 2 Tbsp almond butter
- 1 tbsp coconut oil (melted)
- Pinch of Himalayan salt
Peel, cut and steam the sweet potato until soft (roughly 15 minutes).
Place sweet potato together with the dates, avocado, almond meal, buckwheat flour, almond butter, coconut oil, raw cacao and salt into a high speed blender or a food processor. Process until smooth.
Spoon mixture into a loaf tin (or small square tin) and bake at 180°C (fan forced) for 15-20 minutes until a fork inserted comes out clean.
Optional: When cooled, drizzle raw chocolate sauce (made with 2 Tbsp Connect Foods Organic Raw Cacao, 2 Tbsp melted coconut oil and ½ tbsp nut butter) topped with chopped pistachios.
