Tangy Maca Mango Monk Shake w/ Goji Berries
Spring is in the air! The weather is getting warmer, and smoothies are getting fruitier. This one is a bit different but super tasty! I like to call this the 'monk shake', as it features the unique flavours of Tibet and India with lots of goji berries and mango, which are then rounded out with tangy lime.
First take 1/4 cup of goji berries, and add 1/2 cup hot water. Allow to sit for about 5 minutes to steep and cool. This will soften the goji berries and make them easier to blend, without the dried sticky bits getting stuck in your teeth 😁
Then add:
- One frozen banana
- 1 cup frozen mango chunks
- 1 tsp Connect Foods maca powder
- 1 Tbsp raw honey
- 1/8 cup whole fat coconut cream
- 1 small scoop pea protein
- Juice from one small lime
- Small handful of ice
- (optional to add 1 Tbsp lucuma for an extra maple taste)
Blend together in a vitamix-type blender for a thick delicious nice cream consistency. If it is too thick, you can add a bit of almond milk or other nondairy beverage you have on-hand. Although this recipe calls for one small lime, I found these beautiful blood orange limes and decided to give them a go! Since they're tiny, I used two in this mix.
