Easy Sugar-Free Raspberry Chia Jam

This recipe is so simple, you'll want to make it all the time to always have on hand. Chia seeds naturally expand and create a gel-like texture when soaked before eating. This is not only stimulating for your taste buds and senses, but this process also activates their naturally-occurring vitamin C. Packed with omega fatty acids and vitamins, this is much more than just a tasty jam.

What you'll need:

  • 1 heaping cup frozen raspberries and raspberry pieces
  • 1 cup fresh mountain spring or filtered water
  • 2-3 tiny scoops of pure stevia powder
  • 6 Tablespoons of Connect Foods Chia Seeds

Place raspberries and water in blender and mix on medium-low for at least one to two minutes. This will blend thoroughly, grinding up the seeds, and minimizing the risk of those little guys getting stuck in your teeth! (Every raspberry lover can appreciate that) Raspberry seeds themselves are also extremely beneficial to your health.

Add 2 scoops of stevia to your mix and blend well. Taste test your soupy goodness, and add more stevia if you like it a little sweeter. Pour into a glass jar that comes with a handy lid. Gently stir in your chia seeds and place in the fridge uncovered for about 20-30 minutes, stirring occasionally.

It will thicken into a delicious jelly paste! After the chia seeds have completely soaked and your consistency is thick, cover with a lid and keep stored in the refrigerator.

You can use it for a variety of things! Spread thickly onto gluten-free toast, dollop atop your next yoghourt parfait, or even use it in these delicious peanut butter and jelly celery bites!
