Tahini Power Protein Balls

These delectable morsels have (almost) zero sugar. In fact, you can opt out of the honey and make them into completely sugar-free, pure protein packed, savoury little gems. I've used Tahini a lot for salad dressings, dips, and other saucy concoctions... but I've been seeing it used a lot in raw desserts lately! So I decided to give it a whirl. These turned out great with or without honey, the Manuka will give you a little anti-fungal boost with all that savoury protein ;)

What you'll need:

  • 3 Tbsp coconut oil
  • 4 Tbsp coconut paste
  • 50g cacao butter
  • 1/2 cup smooth almond butter
  • 1/4 cup tahini
  • 1 1/2 Tbsp Manuka honey
  • 1/2 cup pure pea protein powder
  • 1/3 cup lucuma powder
  • 1 teaspoon mesquite powder
  • 1 teaspoon maca root powder
  • 1/2 cup activated buckwheat
  • chia seeds and sesame seeds (for coating)

Put a small saucepan on very low heat. Combine the coconut oil, coconut paste, and cacao butter. Stir gently until melted and combined.

In a medium mixing bowl, stir together almond butter, tahini, and honey. Pour in the melted oil mixture and stir until combined. In a separate bowl, sift together protein powder, lucuma, mesquite, and maca. Add the powder mixture with the wet ingredients and stir until thoroughly mixed. Gently stir in the buckwheat.

Pour out chia and sesame seeds onto a plate. Spoon out mixture using a teaspoon, and roll in between your palms with clean hands, creating little doughballs. Roll into the seeds until covered. The 'dough' will be delicate, but will harden as it cools.

Yields about 18-24 protein balls, depending on size. Arrange on a flat tray and pop them into the freezer for about 20-30 minutes, and they are ready to enjoy!

Store in the refrigerator or freezer. They will be much more solid from the freezer depending on which consistency you desire!
